What are black mushrooms?
Black mushrooms, also known as mu-err mushrooms, are a traditional ingredient in Asian cuisine. They are characterized by their dark color and slightly cartilaginous consistency. They absorb flavors very well and are therefore an excellent addition to many Asian dishes.

Why are dried Mu Err mushrooms so popular?
Dried mushrooms have a long shelf life and are easy to keep in stock. After soaking, they acquire a pleasant texture that is ideal for soups, wok dishes and salads.

🍽️ Recipe ideas

🍲 Peking soup with Mu Err mushrooms

Ingredients: 50 g Mu-Err mushrooms, 1 carrot, 1 spring onion, 1 egg, 1 tbsp soy sauce, 500 ml chicken or vegetable stock, 1 tsp cornstarch, salt & pepper to taste.

Preparation:

  1. Soak the mushrooms in warm water for 20 minutes, drain and cut into strips.
  2. Cut the carrot into fine strips and chop the spring onion.
  3. Heat the broth, add mushrooms and vegetables and simmer for 5 minutes.
  4. Stir in soy sauce and thicken slightly with cornstarch.
  5. Whisk the egg and slowly stir it into the hot soup.
  6. Season with salt and pepper and serve hot.

🍚 Asian vegetable stir-fry with black mushrooms

Ingredients: 50 g Mu-Err mushrooms, 1 pepper, 1 zucchini, 1 garlic clove, 2 tbsp soy sauce, 1 tsp sesame oil, 1 tsp ginger (grated), 1 tbsp sesame seeds.

Preparation:

  1. Soak the mushrooms in warm water for 20 minutes, drain and cut into strips.
  2. Cut vegetables into thin strips.
  3. Fry garlic and ginger in a pan with sesame oil.
  4. Add mushrooms and vegetables and stir-fry for 5 minutes.
  5. Deglaze with soy sauce, sprinkle sesame seeds over it and serve.
